The Lifestyle of a Vegetarian in College

Submissions can be anything from recipes to photos that are vegetarian or something you would like to see featured on the blog. It can have anything to do with what you've been doing on campus that is green to not so quality cell phone pics of that delicious three am snack you just made.

Ingredients:

  • 2 tablespoons oil
  • A handful of sliced onions
  • 1 frozen hash brown patty, cubed
  • 1 teaspoon garlic
  • 2 mushrooms, minced
  • 2 eggs, scrambled
  • 2 slices of avocados, cubed
  • Handful of grated mozzarella cheese
  • Salsa
  • Tortilla shell

To make this all you do is put your oil, onions, hash browns, and garlic in a frying pan for until the hash browns are tender and onions are caramelized. Add the 2 eggs with the onions and hash browns still in the pan and scramble the eggs with the other ingredients. take the tortilla shell and lay it on a plate and pour all the ingredients from the pan into it. Add the cheese and salsa. Roll the tortilla into a burrito, make sure it is tight enough where the food inside doesn’t fall out. Lastly, bring the rolled burrito back to the pan so the cheese will melt inside and press with a spatula from side to side as if you’re making a grill with the pan and your spatula. Cut the burrito in half with a sharp knife and you have a delicious homemade burrito. Enjoy!

Salad Consisted of:

  • Fresh Spinach
  • Carrots
  • Green Olives
  • 1 Slice of Provolone Cheese broken up into pieces
  • Balsamic Vinegar

Noteworthy Warning; It uses like 8 things of cream cheese so it can get pretty expensive, but it was so yummy it might be worth it!
