Potato, Kale, and Cheese Quesadillas

This recipe looked somewhat questionable but delicious at the same time. So to start off I was definitely skeptical of the greens inside the quesadilla, but it turned out to be a wonderful flavor combination and a very hearty dinner. Although we made the recipe a bit differently than the original recipe that was posted, (But that shouldn’t surprise anyone by now..) it came out quite lovely.  

Changes and substitutions made:

  • Instead of using the baking method to cook the potatoes, we just cubed them and added some water then threw it in the microwave for about 8 minutes to conserve energy during the summer of using the oven.
  • We didn’t have any Monterey Jack Cheese or goat cheese, we added some sliced provolone and mozzarella to the inside of the quesadillas.
  •  Since salsa verde could not be found, we just used regular salsa. 
  • And finally we used Kale rather than mustard greens because it was cheaper and I had never eaten mustard greens before, being my skeptical self. So we never actually steamed or cooked the kale we just cut it off the bunch and threw it into the food processor.
